We select high-quality grapes from premier growers in the Finger Lakes region and Long Island. We make multiple vineyard visits to ensure our growers employ the most stringent vineyard practices. Our wines are true to the uniqueness of the fruit we select, with a focus on quality. We strive for the ultimate balance between flavor, texture, acid and tannin structure followed by distinguishing characteristics of terroir.
To offset the unknowns in this business of mixing science and art, Rooster Hill has fitted the winery with state-of-the-art equipment for both the winemaking process and care of the wines. Such care has been taken to control the conditions that the entire operation can be managed by a handful of people to maintain the ideal conditions for aging and storing wines year round.
