In the early 1990s, a group of young chefs got together to create a cooking style specific to Hawaii that later became known as Hawaii Regional Cuisine. Many of these chefs still run gourmet restaurants on the Big Island that specializes in serving this type of cuisine. The Big Island, as the home of this cooking style, has thus become quite the culinary destination as well. The South Kohala resorts, Kailua-Kona, and the town of Waimea in particular, are internationally renowned for their Hawaii Regional Cuisine.

Hawaii Regional Cuisine utilizes natural ingredients grown from the island's fertile volcanic soil, meat from local cattle ranches, and the freshest catches of deep-sea fisherman. The delectable dishes that are produced are the result of blending together the traditions of Chinese, Japanese, Filipino, and Portuguese cooks.

If you prefer more ethnic cuisine, it's recommended that you check out parts of the Big Island less frequented by tourists, such as Hilo. Natural and vegetarian restaurants are also scattered about the island in various locations.

Finally, Hawaii is the only place in the United States where coffee beans are grown. This means that, in addition to the delicious delicacies you can find in the island's gourmet restaurants, you can enjoy the “home grown” brew served at many of the small cafés tucked away near the island's coffee plantations.
